These are packages of very thinly sliced Black Label Reserva ham by Redondo Iglesias. After importation, we have it sliced weekly by a local Virginia smokehouse owner in a neighboring town. This is true jamon serrano imported from Spain: a lean ham with a rich nutty flavor, salt-cured for 14 to 18 months in Spain. By slicing our hams locally, we assure that the slices remain fresh and flavorful. Once packaged, we apply our house Peregrino label , a symbol of its quality handling. Our slicer carves each whole ham by hand, placing an interleaf between the slices. There are about 15 full slices per pack, the number varies slightly, because it is sliced by hand. Time for serving tapas? Just peel off the slices you want, and keep the rest in a zip-lock package for another day.
